Beer of the Week: Pilot Brewing, "Chinook IPA Cask Conditioned Ale"

In case you haven't heard, Pilot Brewing is Charlotte’s newest brewery. It just opened in Plaza Midwood on Friday, August 11, and we’re thrilled to get the chance to taste of the beers they’ve brewed so far… not to mention, the unique ones that will be coming soon (but more on that in a minute).
Read on to learn more about our local beer of the week from Pilot Brewing, and what else you can look out for from the new brewery in the coming months.
The Beer: Chinook IPA Cask Conditioned Ale
Every week, the folks at Pilot Brewing will release a new small batch brew as part of their "Firkin Friday" beer release series, featuring a new cask conditioned ale every Friday. And not to rush you or anything, but the releases will need to be consumed within 48 hours of being tapped due to the way they're pumped from the cask into glasses! This week's release is a bright, juicy grapefruit IPA. The 6% ABV brew is created using only Chinook hops in the brewing process, then adding dry hops of Galaxy for a flavorful burst of citrus. Stop by Friday 8/31 to try it for yourself!
The Brewery: Pilot Brewing
Pilot Brewing is the newest brewery to hit Plaza Midwood, located on Central Avenue right next to the newly-opened Yafo Kitchen.
If you were expecting a brewery full of traditional beers and dependable year-rounds, you’ve got another thing coming. Pilot has 12 taps flowing with small batch, experimental beers. No flagships or year-round brews here! Pilot is all about freshness, curiosity and innovation. Soon, they’ll expand to 17 taps, giving their brewers more space to create just about any beer they can dream up.
And Rachael, owner and head brewer at Pilot Brewing, won’t have any problem generating enough ideas for new beers, since every single person who works at Pilot in any capacity also brews beer. Yup, that’s right-- every person who works at Pilot Brewing in any capacity (down to the person who cleans the bathrooms) also conceptualizes and brews beers that will end up on tap at some point.
The brewery’s 1,900 sq. ft. space boasts a dog-friendly patio and a rustic, yet modern interior comfortable enough for an entire evening of catching up with friends.
